I recall in South Africa you used to get two types of celery - the regular type with the blanched stems, and a smaller plant that was known as soup celery and was used as its name implies in soups and stews. It was a different plant having thinner stems and more leaves than the usual type.
I am curious to know if anyone has encountered soup celery here - I have only seen the tall one that is grown for its stems and made use of what leaves I could get off it for soups and stews, but would much prefer the type I was accustomed to in SA.
