I'll be updating this in due course (read as sometime this year ). Since writing the article, my dear friend Claire has gone across the pond to head up the pastry section of one of the finest restaurants in the world - The French Laundry.

A little later on in the year I'll have another 'busman's holiday' and go across to spend some time with her there. Oh.. and I hope to eat there at least one night

She too is living a dream - and continually amazes me with her dedication to her craft along with her inspiration to many chefs here in GB.

A loss to the chefs of GB? I think she is gathering more life experience to share upon her return. A true master.

Incidentally she is featured in the Olive magazine (May issue) - great surprise to open it and see her as someone to watch for the future.
