Oysters - Bean of Love - 26-05-2004 This might sound zany, but I have such a craving for oysters with lemon, tabasco and black pepper. So far I have yet to come across a restaurant that serves them.... So... my question... I have seen them at Tesco, but I have not the faintest idea how to open and clean them or do whatever needs to be done to them.... I know I am showing how little I know, but I'd rather ask now, than panic later when I buy them... Any suggestions or help??? Oysters - Cheffie - 27-05-2004 Firstly.. find out the point of origin of the oysters, eg: are they Pacific/ Native/ Irish Rock etc etc. Make sure there is no 'smell' to them and they look fresh. If the shell has started opening, err on the side of caution and discard. The oysters should be 'alive' and should 'move' slightly when lemon juice is squeezed over them. You'll need to buy an oyster knife and using a tea towel you'll have to open them at home. whatever you do, ask the fishmonger to open one or two for you, so that you can see the technique required. You can also eat them with a shallot vinaigrette and crusty brown bread As a last resort.. I can hire out a very good oyster opener.. she does charge a fortune though.. and Champagne is mandatory Oysters - Bean of Love - 27-05-2004 Thanx Cheffie... mmmmnn... If I came to your restaurant, obviously when you are there.... would you teach me? I just had a look at your website....yum yum is all I can say. When I mentioned the chicken livers to hubby, he was about to jump into the car, ready to go!!! Oysters - Cheffie - 27-05-2004 Quote:Originally posted by Bean of Love Hi Bean.. If you wanted personal tuition then it would cost far more If it were a regular item on the menu then I would gladly invite you along for a show or two.. however the safest bet to date would still be the local fishmonger - if you want my supplier's no, please drop a PM and I'll gladly pass on their details. As for the website.. yum yum is due to the Duck Oysters - Pookie - 28-05-2004 Quote:Originally posted by Cheffie bean sweet pea there is no amount of money that will buy my time to do this for you. After requesting 50 oysters from my concubine owner and the delivery of such including a knife and being shown how to do it and 3 hours later still battling to open them your best bet would be to go to a reastaurant and order them. I have not had an oyster since this educational experience and pity the poor person who is employed to open these things. so come to Cape Fish and order them hon - you wont be dissapointed Oysters - Cheffie - 28-05-2004 Quote:Originally posted by Pooky Whoosh... and romance just flew out the window what about the Champagne?
