I use this one:
Malva Pudding
Pre-heat oven to 180 degrees C.
200g sugar
2 eggs
15ml (1 tablespoon) apricot jam
150g flour
5ml (1 teaspoon) bicarbonate of soda
a pinch of salt
15g butter
5ml vinegar
100ml milk
For the sauce? (just use cream)
200ml cream
100g unsalted butter
150g sugar
100ml hot water
Beat the sugar and eggs well in a food processor until thick and lemon-coloured, and add the jam.
Sieve together the flour, bicarbonate of soda and salt.
Melt the butter and add the vinegar. Add this butter/vinegar mixture and the milk, to the egg mixture alternately with the flour. Beat well and bake in a covered oven- proof dish for 45 minutes.
Melt together the ingredients for the sauce abd pour them over the pudding as it comes out of the oven.
