Time to work then.. when you shop. Look for the various cultivars - kinda like grapes, only grapes make wine. Potatoes do the vodka bit. And there I digress again - and let me know what cultivars are available.
Maris Piper; Van der Plank; BP1; Desiree; etc might be around. Get hold of the local chefs association and they'll be able to tell you the exact cultivars available - heritage potatoes included..
Then we can ween you off the vodka/ grape distillery and get you onto your cheesy bits
